Dusty Grable grew up on the windward side of Oahu in the beautiful town of Kailua and pursued a career in hospitality while working his way through college at the University of Hawaii. He fell in love with serving others and building successful teams throughout his career at some of the best restaurants in the United States including Alan Wong’s and Gary Danko in San Francisco.
Born in Kennebunkport, Shaymus Alwin discovered a love for cooking at a young age. When he was 10 he started cooking Italian meals with his mother and dreamed about one day becoming a chef. He moved to Oahu and worked at Chai’s Island Bistro as a sous chef. In 2010, he moved to the Azure Restaurant and received numerous awards for cuisine and management.
Patrick Collins was born in Ventura, California and moved to Europe during his formative years from ages 10-18. A graduate of the Culinary Institute of America, Collins spent 12 years cooking in New York City cooking in some of the best kitchens in the city, including Allen and Delancey and the Dutch. In 2016 Collins moved to Honolulu to start a family and joined the opening team at Senia.
